What’s the best oil after a ReMap

TBH I don't think you would need a 'race oil' not sure who told you that but I've never heard of it. I know you would need to use a specific fuel after remapping, for example if the car has been remapped on 99ron that's what you would need to use, you couldn't use a general 95ron, not sure if...

Ep3 antiroll bar hitting rear arm

With some JDM manifolds they can hit the front ARB as on the JDM EP3s the ARB is a different shape to accommodate a different shape manifold. It's a 4-2-1 rather than the UK version 4-1. I put a manifold and cat off a DC5 onto my EP3 and had to use the JDM ARB. Seems your issue is on the rear...

Too much rust? Or not too bad?

Looks more like surface rust to me, not much to worry about, You can rub as much off with a wire brush and treat it with lanoguard or dinitrol to help stop the spread, I've seen way worse rust than that.

    Revs dropping below idle

If there is a code saying a vss fault then that is most probably it then, they both give very similar symptoms to be honest that's why I thought it was worth mentioning. If I remember correctly I think the OEM throttle position sensor is a wiper style sensor that can wear or stick over time...

Have you looked at the throttle position sensor? Have you upgraded your engine mounts? If the mounts are stiffer it can cause more vibration which can effect the TPS which in turn can cause fluctuations with your idle, maybe worth checking.

    OEM or Tegiwa?

I doubt the 400cel cat would cause any issue with the EML coming on, you can always buy an O2 sensor spacer which Tegiwa also do, it just pulls the sensor slightly out of the flow of exhaust gases preventing the light to come on. Sent from my Pixel 6a using Tapatalk
