    Default 4-2-1

Just got a 4-2-1 header fitted on my ep3. I have got the map booked in for end of next month. Will it be ok to drive the car until then or best to leave parked till map day

Just a manifold shouldn't be enough to cause fuelling issues. I'd avoid driving it where possible and not thrash it until its mapped. Then it's game on!

Backpressure and scavenging are a big thing with NA engines. I think changing the exhaust manifold (and/or decat) without mapping on a K20 is generally a bad idea as it can cause the engine to run lean.
