Motul RBF 600 if it will also be going on the road, if it is pure track Motul RBF 660

Doubt you will cook the 600 anyway
I run the RBF 660 on road and track, not had a single problem. Got mine from JJC race & rally on ebay they had it on special.
If you want something a little cheaper, try some ATE Type 200, but you'll likely need to change it out after being on track, although I never got any fade, I did find that the pedal got increasingly longer back on the road.
