You don't get a certificate of conformity if you buy a new car in the UK. You may get lucky and find someone who has moved a car from the UK to Europe and so requested one from Honda but not very likely given their ready availability on the continent and the steering wheel being on the wrong side.

Your best bet might be to contact Honda directly or try an importer who will have had to acquire one for the SVA test when bringing an EP3 into the UK from Japan, although that car is a different model from the the UK car so it might not be what you are looking for.

i thought that every UK car got a COC in their honda paperwork

No. I've never seen one.
